This aniseed aperitif was invented in France by Jules Pernod as a relacement for the banned absinthe, and quickly became a massive successs in its own right and is one of the most celebrated spirits of the 19th century. Well known to be loved by artists, poets and writers the chief flavour derives from distilling star anise with select aromatic plants and herbs.
